What does a sucrose Brix reading report?

A sucrose Brix indication is soluble solids on a sucrose scale, not grams of sucrose in every mixed liquid.

A digital sucrose meter reports soluble solids as if the sample were sucrose in water. Acids, salts and other dissolved material in juice also bend light, so the indication is not grams of sucrose per 100 g. Keep the scale, the liquid and the temperature with the number. This page does not convert that reading into honey moisture, coffee solids or urea.

Does a Brix reading equal grams of sucrose per 100 g?

On a sucrose-calibrated meter the indication matches sucrose mass fraction only when the sample is sucrose in water under the stated conditions. Fruit juice, wort and soft drinks also contain acids, salts and other dissolved material that change the refractive index. The displayed Brix is therefore soluble solids expressed as sucrose, not a sucrose assay. Keep the sample identity with the number before comparing it with a nutrition label or a recipe target.

What else besides sucrose can move the reading?

Anything dissolved in the drop that changes refractive index can move a sucrose Brix indication. Organic acids in juice, mineral salts, other sugars and residual pulp fines are common examples. Suspended particles and surface films can also disturb an optical boundary. Record how the sample was taken and whether it was filtered or stirred. A change in the number is a reason to inspect the liquid and the prism, not proof that sucrose alone changed.

Why must the scale stay with the liquid?

A refractometer measures refractive index. The printed or digital scale is a conversion for one family of solutions. Honey moisture, coffee total dissolved solids and urea mass percent use different conversions on the same physical effect. Taking a sucrose Brix number and treating it as one of those other quantities is a change of definition, not a unit conversion. This site stops at sucrose Brix before fermentation and does not publish those other conversions.

Keep the instrument model, the stated scale, the liquid identity, the sample temperature and whether that temperature sits inside the published compensation window.
